St. Patrick’s Day is quickly approaching and while I may not be Irish, I love any excuse to be festive. Last year I made Irish soda bread scones with sea salt whisky butter and this year I thought I’d put a spin on a classic sweet treat for an easy and affordable, yet fun holiday dessert. Total Time: 15 minutes
6 tablespoons butter
8 cups miniature marshmallows
12 cups Lucky Charms
1. In large saucepan melt butter over low heat. Add marshmallows and stir until completely melted. Remove from heat.
2. Add Lucky Charms cereal. Stir until well coated.
3. Using buttered spatula or wax paper evenly press mixture into an 8-inch square pan coated with cooking spray. Cool. Cut into thick squares. Best if served the same day.
